I remember as kid opening up little plastic cups of chocolate pudding and loving every bite. My Gran always made pudding too from the little boxes, and don’t get me started on pudding pie we would enjoy made with the graham cracker crust and whipped topping. Literally heaven.
Pudding is something I refuse to let go of. It is just that good. I have a much easier and much more all-natural paleo chocolate pudding for you. It is dairy-free, packed with Omega-3’s from Chia Seeds, and is tasty all the same. I present to you: Chocolate Chia Seed Pudding.
Chocolate Chia Seed Pudding – A Paleo Chocolate Pudding
The Players
1 and 1/2 cups Almond Milk (how to make homemade)
1/4 cup organic cocoa powder (where to buy)
1/3 cup chia seeds (where to buy)
maple syrup – to taste (I use about 3 to 4 tablespoons)
1 teaspoon vanilla extract
dash of sea salt
The How-To
1. In a medium size bowl, whisk together 1/4 cup almond milk and the cocoa powder until a smooth mixture is achieved.
2. Once smooth, add in and mix in the maple syrup, vanilla, and salt – then add in the remaining 1 and 1/4 cups almond milk until everything is mixed together completely.
3. Slowly stir in the chia seeds, whisking the whole time. Allow to sit for 30 minutes in your fridge and then whisk again to redistribute the chia seeds. Allow to sit 4 hours to overnight.
4. Your paleo chocolate pudding is ready to serve!

Wow! Chia seeds are a pretty new phenomenon here in Ireland, but I haven’t really seen how to use them in anything as of yet. I’ve bookmarked this page! This is dairy free completely right? Thanks for the recipe!
