Today at the Farmer’s Market I got a great deal on pecan meal. Because it’s basically the toss-asides created during the shelling process, pecan meal cost half as much as the already shelled pecans. When I tweeted about my find, several people asked what I do with pecan meal.
A host of ideas leaped to mind: pecan crusted meat dishes, a couple of salad dressings I love, even pecan waffles! I made one of the salad dressings tonight for dinner — a pecan garlic salad dressing. Now you can enjoy it too!
Pecan Garlic Salad Dressing Recipe
The Players
- 1/2 c. olive oil (cold pressed & UV-protected; where to find REAL olive oil)
- 1/4 c. raw apple cider vinegar
- 1/2 c. pecan meal (finely chopped pecans)
- 2 cloves of garlic, minced
- 1 tsp. raw honey
The How-To
Mix all the ingredients together. Serve. For a smoother dressing, you can blend in a food processor.
How easy is that?

That sounds great! I enjoy a big ass primal salad just about everyday for lunch. For my dressings I just throw together whatever sounds good at the time – usually an olive oil base.
I have never thought about using pecan meal for dressing! I have never bought almond meal, but my mother always has pecan meal. I will have to make this today with my salad!
I am also going to my local farmers market on Saturday so maybe I can grab a great deal on more pecan meal or almond meal. I never thought a farmers market would carry this… I guess I will have to check!

Where do you live? That might have a lot to do with whether or not you can find Pecan meal at the Farmer’s Market. Are you in a part of the country where Pecan trees grow EVERYWHERE? (I am.) Also important: make sure the meal has been kept frozen or refrigerated since they made it, otherwise it’ll be rancid.

This sounds delicious! I’ve always loved toasted pecans in salad, but I’m so picky when it comes to dressings. I love salad, but I avoid it a lot due to this fact. I’m going to try this out when I pick up the ingredients on my next trip to the grocery store.

Wow! This was AWESOME. I accidentally forgot the honey, so when I tasted it i felt like it was lacking something, so I added 2 cloves of garlic and stuck it in my food processor, I am not sure the flavor was the same, but it had an awesome kick. Can’t wait to try the honey version!
