If you’re like me, you love finding desserts that are nutrient-dense and raw. Something about it makes me feel… What’s the word? Guiltless? Brilliant? I don’t know.
I made this for the first time last week, and I was shocked — shocked — at just how good it was. My kids raved about it. My husband asked for seconds. And it took less than a minute to prepare.
I kid you not. Less than 60 seconds.
So, here’s the scoop. It’s hardly worth calling this a recipe, but I figure I’ll treat it like one anyway for all you super-organized folks out there.
- 1/4 cup creme fraiche or cultured sour cream (both taste divine!)
- 1 Tbsp raw nut butter (we’ve used cashew, peanut, and almond) (where to find nut butters from properly soaked nuts)
- 1 tsp raw honey (where to find raw honey)
These directions make a single serving, so I’m showing you how to whip it together in your serving cup. This is an old tea cup from my mother-in-law’s everyday china. To begin, plop in your dollop of creme fraiche or cultured sour cream.
Next, add in the small dollop of nut butter.
Add a drizzle of honey.
I know it doesn’t look glamorous, and it might sound a little bit weird. But it’s heavenly!
I’m arleady growing excited by all the variations I can do with this. Just imagine stirring in the freshly picked berries of late Spring. YUM.

I love nut butter and coconut cream, no honey or other sweetener required — blend with a fork until whipped, but leave a few lumps of cream…eat with a spoon, or spatula! Heavenly! Or add butter and/or coconut oil, for even more fat 🙂
I strained grass fed, whole milk yogurt for whey this week. I added honey and walnuts to the “cheese” and spread it on a homemade, whole wheat sourdough bagel. It was divine! I snuck a few spoonfuls while making it too. It sounds very similar to this, and I agree… it’s amazing!

Everyone — Thanks for the compliments. I felt silly sharing this since it’s hardly a “recipe,” but people shouldn’t be deprived of such an easy snack! I can’t believe how long I lived without knowing how tasty this could be.

Looks devine! I love creme fraiche. I lived in France for 5 years so used it a lot! It’s such a staple there. Too bad we don’t use it much here. Sour cream is just not the same. Cultured sour cream? I haven’t tried that yet.
I know I can make my own creme fraiche, but do you make your own or buy it at the store? If so, what store do you buy it at and/or what brand do you recommend?
I also love your comment about it being “Guiltless” — that’s what I’m all about 🙂

Dinneen — We make our own using raw cream & buttermilk. It’s so easy to do! Next time I make some I’ll try to get some pics so that I can put a post up about it.

I love this one and also use yogurt a lot for puds. The truly-decadent version involves grated (fair trade organic) dark chocolate. However now I am turning into a bit of a no-dairy girl, I will try the coconut version. In fact I have been craving cococut recently…
My big complaint is that bars/pubs do not serve healthy drinks that boost energy! I hate the ones made with droves of sweeteners and additives. I have been dreaming of a healthy coconut one recently…

I first discovered a variation of this on an SCD recipe site, and thought it was genius! Us SCDers are supposed to eat a lot of yogurt, so I’m always looking for ways to mix it up. I like it best with homemade SCD yogurt, almond butter, light on the honey, and with a whole ripe banana mashed in. Chill for an hour or so (or freeze!) and enjoy. I call it “banana nut pudding”. 🙂
Might be a bit more tangy rather than sweet, but I always have raw milk Kefir “cream” cheese left over from draining out the whey for ferments. Using the kefir “cream” cheese would really give it a probiotic punch!

Just “made” this and it’s so satisfying, simple and delicious! I’m so glad you posted about it as I would not have thought of it. I was just wondering yesterday what I should do with the leftover creme fraiche I have in the fridge from a recipe!
