Last year, researchers at the Children’s National Medical Center found that children who suffered from asthma and seasonal allergies were 20 times more likely to be Vitamin D deficient than children who didn’t suffer. Likewise, recent study results presented at the American Academy of Allergy, Asthma, & Immunology demonstrated that Vitamin D supplementation helps prevent seasonal allergies and also makes symptoms go away more quickly. As helpful as these studies are, I’m not a fan of taking nutrients in isolation. That’s not how they’re found in nature, and we’ve amassed plenty of evidence over the last few decades to demonstrate that nutrients don’t work in isolation. Rather, they work synergistically with the other nutrients present in food. When we take individual nutrients in isolation, we often create systemic imbalances in our body.

Things I Love
Summer is in full swing here in Texas. Berry season has passed and my freezer is stocked with gallons of strawberries and blackberries. I’ve picked up oodles of sweet, ripe tomatoes at my local farmer’s markets. The kids and I have enjoyed swimming at the local swimming holes. And, of course, the air-conditioning has been out for a few days causing us all to hope for a few moments of sweaty sleep in the buff under ceiling fans. The heat is clouding my brain, making me tired, impatient, and unable to string a coherent thought together. So, in an effort to exercise my attitude of gratitude, to flex my happy muscles, I’m sharing a post today enumerating some of the things that have made me smile.
Grain-Free Apple Pancake Rings
Have you seen Apple Pancake Rings before? They’re genius! Who wouldn’t love thinly sliced apples dipped in pancake batter and pan fried? Serve them up like pancakes, but with a kick. Any pancake batter will do the trick, but I’m going to share how I make mine using coconut flour.
School Lunches Made This Child Sick
