Nutrition fascinates me. It's a blend of biology, history, chemistry. It's the story of traditional peoples and what they ate, the story of convenience foods and food manufacturing. It's the story of modern Industrial agriculture, synthetic fertilizers and pesticides, genetic engineering, and diminishing top soil while also being the story of humane animal husbandry, biodynamic farming, and a respect for life. It's the story of modern diseases like cancer, diabetes, and heart disease. Yet it also teaches about true health and aging with stamina.

Needless to say, it's rich, deep, and relevant. You can tell I'm passionate about it, can't you?

Well, I want to pass that passion on to the next generation.

Check out this Sneak Peek video from the first class! The first lesson takes a look at how we make good food choices. We examine two competing ideologies. The first, called nutritionism, believes that it is the scientifically identifiable nutrients in food that make them nutritious. To eat well, you have to eat more of the "good" nutrients and less of the "bad" nutrients. And, because a nutrient is not something you can casually see, smell, or taste, you have to rely on experts to tell you what to eat.

While this may not seem all that bad on the surface, it has had disastrous consequences for our national health. In the video below, called Food, Not Nutrients, I explore the concept of nutritionism in depth (with a significant amount of help from Michael Pollan).



Of course, there's a lot more to this lesson! But hopefully this video will give you a taste for how the videos, book, reading materials, audio files, discussion questions, and projects will all work together to create an enjoyable multi-sensory learning experience.

Fall 2010 Details

Registration closes on September 24th. Classes begin October 1st and run through December 10th, with final assignments due by the 17th. New class materials are posted each Friday. Students participating for a grade must complete that week's coursework before the following week's lesson is posted, yet all materials will remain posted and available for the entire duration of the course for those who want to set their own pace. If you would like more than one student to take the class, please see the FAQ page for how to do that cost effectively.

If they haven't purchased a copy already, students should buy a copy of Real Food Nutrition & Health, as it will provide the majority of the required reading for the course. If purchasing a printed book, please allow 7-14 days for delivery.
