Did you know that 1 gram of naturally-fermented sauerkraut can easily contain 54 billion live bacteria? Compare that to a fairly standard probiotic supplement, which only contains 2-5 billion live bacteria per pill. I’m not knocking the supplements. After all, I take them daily to act as a sort of “cushion” for the days when I fail to get a fermented food into my diet. (You can see which probiotics I recommend here.)
But WOW! 54 billion live bacteria??? In less than a half a teaspoon?

Blessings to all entrants … we are new to fermentation in the creation department. Being from Hawaii, we grew up on a cultural mix of foods and love kimchee & daikon. I would love to make a multitude of fermented foods for my family as we all love them, but with a huge family, it’s getting harder to afford them. We’ve recently discovered a place to buy raw milk and have been making raw milk kefir and will soon be making our own crock-pot yogurt with the kefir, raw milk and a little of this one plain, whole milk yogurt we love.

Would love to take this class! My (extended)family has so many diet-related health issues and I lost a very dear friend to cancer recently. All the doctors wanted to do was fill her body with poisons. After they couldn’t do anything else for her, THEN they suggested organic foods and told her they wished her well. I’m angry that I lost a dear, vibrant, witty, beautiful friend and I think if they had started with better food, detoxing, etc. she still might be here.
